Her craft, slow-food cuisine takes advantage of her natural-talents, diverse experiences, inquisitive nature and pure grit. She was born in Maui, Hawaii and trained at the Art Institute of Seattle before coming to Asheville in March of 2003 to work as a pastry chef for Savoy. That fall after realizing four 10-inch cakes could fit in her oven, Sweet Monkey Bakery was born. Chef Hollie won the 2015 Asheville Food & Wine competition with a taste-driven quail dish featuring coconut milk and chipotle, and in the June of 2016, her second location in Hot Springs, NC opened.
Chef Hollie West opened her Main Street Marshall, NC location July 20th, 2014 following over a decade of getting to know the greater Asheville food community through catering and several community tail-gate markets.
